Cellar-to-Table Dinner Series – Stonewall Resort State Park

West Virginia State Parks, in partnership with West Virginia Cooks, is pleased to announce the 2025 WV State Parks Cellar to Table Dinner Series at various state parks this spring.

Join Chef Rocco Basil, Chef Matt Welsch, the Executive Chef for West Virginia State Parks, and the highly talented culinary team of Stonewall Resort State Park for an unforgettable culinary experience.

Stonewall’s dinner will be served at Lightburns at 6 p.m. on Feb. 1, 2025. Tickets are $70 per person (plus tax and gratuity), and are limited, so make your reservations quickly by calling Stonewall Resort State Park at (304) 269-7400.

Our featured guest, Chef Rocco Basil is the Executive Chef for the Diocese of Wheeling-Charleston. He has worked in and around kitchens for almost his entire life. A native of Brooke County, Chef Rocco first set out to be a wood toy maker in Florida, but thanks to a car that didn’t make it, he came back home and begged to work at the Anchor Room, a premier and highly popular seafood eatery during the height of the booming steel mill days of Beech Bottom. This job sparked a passion for food. Although he’s worked among the best in the industry, Chef Rocco notes that his cooking mentors were his mother and his two grandmothers. His style is a fusion of Italian and Appalachian cooking, that pares down to what can be called, good country comfort.

Menu for dinner:

– Pickled trout with creola salsa, fried capers, leek and potato galette, and dilly beans

– Fried shepherd’s whey chevre with roasted beets, grilled radicchio, autumn spiced walnuts, orange oil, and blackberry agrodolce

– Wild boar sausage fiejoada with collard greens and cornmeal farofa

– Ramp gnudi with roasted wild mushroom cream, crispy pancetta, and sage

– Smoked pork wellington with bacon apple herbed shovel cake, wood roasted pearl onions and carrots, and an elderberry glaze featuring a Brew Keepers Irish Pirate Stout demi glace

– Smooth Ambler Bourbon ice cream with peach claufuti, tart cherry syrup, and maple pecan praline
